Nutrition

The Nutrition curriculum integrates the study of biology, chemistry, behavioral sciences, business, and communication into the practice of nutrition and dietetics. Graduates of the UIW Nutrition Program are employed in the following areas associated with food and nutrition: health care, food industry, food service management, community nutrition programs, government agencies, private practice, wellness, corporate sales, and media communication.

Students may select from one of two options to obtain a Bachelor of Science Degree in Nutrition:

  1. Option A, Nutrition and Dietetics, is an accredited curriculum that provides the classroom training and content to prepare students for a career as a dietetic practitioner. Students who complete this degree and meet the Didactic Program in Dietetics standards will receive a Verification Statement making them eligible to take the exam to become a Dietetic Technician, Registered or to apply for a dietetic internship to become a Registered Dietitian. The Bachelor of Science Nutrition and Dietetics option is accredited by the Commission on Accreditation for Dietetics Education (CADE).   2. Option B,Nutrition Science, prepares students for graduate degrees in nutrition and health professions including medicine, dentistry, physical therapy, occupational therapy, pharmacy, and optometry.

Students may complete the Didactic Program in Dietetics (DPD) to be eligible to apply for a dietetic internship to become a Registered Dietitian. The Didactic Program in Dietetics is an undergraduate program in which the students receives a Bachelor of Science degree and must complete some graduate coursework.

Students complete the Didactic Program in Dietetics via admission to the Accelerated Bachelor Degree to Master Degree in Nutrition (ABM) or admission to the graduate program in Nutrition after completing the Bachelor of Science degree in Nutrition & Dietetics.  Students completing option A must additionally take NUTR 6375 Medical Nutrition Therapy (Graduate course, Fall Semester, Prerequisite NUTR4375) to meet course-work requirements for DPD Verification Statement.   The Didactic Program in Dietetics (DPD) meets the Accreditation Council for Education in Nutrition and Dietetics (ACEND) guidelines for preparation for a career as a Registered Dietitian.  Upon completion of the DPD students are eligible to apply to Dietetic Internships. 

The Didactic Program in Dietetics (ABM) at the University of the Incarnate Word is accredited by the Accreditation Council for Education in Nutrition and Dietetics of the Academy of Nutrition and Dietetics, 120 South Riverside Plaza, Suite 2000, Chicago, Illinois 60606-6995, and (312) 899-0040, Extension 5400.
